Roast Chicken

Roast chicken is one of my families favorite meals. I love it too, but not just for it’s taste; I also love that it is easy and economical.  Tip:  I actually roasted two chickens last night, one for dinner and one to put in the refrigerator for lunches throughout the week.

  • one whole chicken, insides removed
  • olive oil
  • salt and pepper
  1. Preheat oven to 425 degrees
  2. Rub a tablespoon of olive oil all over chicken
  3. Sprinkle liberally with salt and pepper
  4. Roast in oven until a thermometer inserted in the thigh reads 180 degrees and the thigh juices run clear, about 1 hour 15 minutes
  5. Let the chicken rest at least 10 minutes before carving
