Roast Leg of Lamb with Paleo Gravy


Just because you are eating paleo doesn’t mean you have to give up things like gravy. This gravy is gluten free and delicious!


Roast Leg of Lamb with Paleo Gravy

Serves: 6-8 servings
  • 5-6 pound boneless leg of lamb
  • 2 tbsp olive oil
  • 7 cloves of garlic, skinned
  • 2-3 sprigs of rosemary
  • salt and pepper
  • 1 tbsp arrowroot powder
  • water
  1. Preheat your oven to 350 degrees
  2. Rub olive oil all over leg of lamb
  3. Make 7 small slits evenly around the roast with a knife and insert the cloves of garlic
  4. Sprinkle liberally with salt and pepper
  5. Tuck sprigs of rosemary under the strings on the roast
  6. Roast approx 1 hour 30 minutes or until the temperature reaches 150 degrees
  7. Remove roast from oven and remove the roast to a cutting board and let rest while making the gravy
  8. Pour pan drippings into a saute pan and place on medium heat on a stove
  9. Sprinkle in the arrowroot powder and approx 1 cup of water, stirring constantly until gravy is thick
  10. Add additional salt and pepper if needed
  11. Slice the roast and top with the gravy or serve the gravy on the side


This roast of lamb is perfect served with cauliflower mashed potatoes and a green salad.
