Mexicali Sweet Potatoes Paleo Style

When you are first starting out on a paleo or gluten-free diet lunch can sometimes seem like a daunting task. It is bummer to not be able to slap together a quick sandwich for lunch anymore. This is a recipe that can save you from those kind of headaches. Keep a batch in the freezer for when you need them. Mexicali Sweet Potatoes are one of my favorite lunches. These are easy to make, taste great and they freeze well, just put into a Zip Lock bag or Tupperware container.

Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 2 tsp cumin
  • 1 tsp chipotle powder
  • 1 tsp salt
  • 1/4 cup chopped cilantro, extra for garnish
  • 2 large sweet potatoes, baked and halved
  • lime, sriracha and diced avocado for garnish

 

Do this:

Place ground beef and diced yellow onion into a large nonstick pan

Cook until golden brown, about 15 minutes

Add cumin, chipotle and salt and cook two more minutes

Remove from heat and add 1/4 cup chopped cilantro

Place one half of a sweet potato on a plate and slightly smash with a fork

Top sweet potato with one cup of cooked ground beef mixture. Top with cilantro, lime, sriracha and diced avocado.

Instructions
  1. Place ground beef and diced onion into a large nonstick pan
  2. Cook until golden brown, about 15 minutes
  3. Add cumin, chipotle and salt. Cook 2 more minutes
  4. Remove from heat and add ¼ cup chopped cilantro
  5. Place one half of a sweet potato and slightly mash insides
  6. Place one cup cooked ground beef mixture onto sweet potato
  7. Garnish with cilantro, lime, sriracha and diced avocado
